Chicken of Six Seasonings

This is a one-pot specialty courtesy of my father. Enjoy!

Chicken of Six Seasonings

3 lbs. chicken, cut up
1/8 c. olive oil
2 T. butter

Flour, salt, pepper, thyme, rosemary, and oregano – mix together in a paper bag

1/3 c. onion, chopped
4 oz. mushrooms, chopped
2 cans diced tomatoes
1 T. brown sugar
1 T. lemon juice
1 t. salt
3/4 c. uncooked rice
1 1/3 cans water

Heat butter and olive oil in a large cooking pan or dutch oven. Toss chicken pieces in paper bag with flour and spices. Add coated chicked to the hot oil and butter. Lightly brown. Add onions and mushrooms. Saute. Add tomatoes, brown sugar, lemon juice and water (or broth). Cover and simmer for 45 minutes on low. Add rice. Simmer for another 45 minutes.
