In just a few minutes, you can make delicious quick pickled red onions to put on everything!
Thinly slice your large red onion using a mandoline or a sharp knife.
Place your sliced red onions in a mason jar so they are tightly packed.
Whisk together boiling water, apple cider vinegar, and white or rice wine vinegar with the sugar and salt until the sugar is dissolved.
If you are cooking on the stove, bring the mixture to a simmer. If you are using the microwave, microwave for about 1 to 2 minutes.
Pour simmering mixture over the onions and make sure the onions are completely submerged.
Let the onions sit for about 15 to 20 minutes before using them. After they cool, store in the refrigerator for up to 2 to 3 weeks.
