Roasting your vegetables will give this Roasted Veggie Green Chili an unbelievable amount of flavor with very little work!

Ingredients
2lbpork, chopped into large bite sized pieces
2Tgluten-free(or regular) flour
Salt and pepper
2teaspoonscumin
6-8clovesgarlic, sliced
3-4peppers, assorted, chopped
1large onion, sliced
1can fire roasted tomatoes(14 oz)
1can white beans(14 oz)
1carton chicken broth(32 oz)
Instructions
Spread onions and peppers evenly over a cookie sheet. Drizzle with olive oil. Sprinkle with salt. Cook at 400 degrees for 20 to 30 minutes.
Toss pork cubes in flour seasoned with salt, pepper, and cumin.
Add olive oil to a heavy bottomed pan. Add 6 to 8 cloves of sliced garlic. Cook.
Add pork tossed in flour. Brown.
Add roasted veggies, fire roasted tomatoes, carton of broth, and white beans.
Simmer for an hour to an hour and a half.
Top with spicy schug ... optional! To make my schug - combine 2 spicy peppers, 1 bunch cilantro, 1/2 bunch parsley, 6 to 8 garlic cloves, salt, and some olive oil in a food processor. Process! Season to taste. Serve over everything.
