This super easy meal is perfect for the new year!
In a large pan or wok, add some olive oil. Add 10 cloves of garlic. Saute. Add chopped broccoli or broccoli rabe. Saute. Cook only until broccoli is just cooked but still bright green. Remove from heat.
Prepare shrimp. In 2 batches, saute shrimp in a hot pan until it is cooked. Turn only once. Remove from heat.
Add the broccoli back to the pan with the shrimp. Toss together once to combine.
In separate pan, heat olive oil with a couple of cloves of crushed garlic. Add minced cauliflower. Cook until soft. Add salt.
Serve shrimp and broccoli over cauliflower rice. Enjoy!
