Stop boiling your lasagne noodles and make this easy GF lasagne!
Lightly spray a large 9 x 12 baking pan with cooking spray. Preheat oven to 375.
Saute onion with Italian sausage or ground beef.
Add 1 large jar of spaghetti sauce. Stir to combine.
In a large bowl, combine ricotta cheese, 1 1/2 cups of mozzarella cheese, and 1/2 cups of parmesan and one egg. Add salt and pepper.
In the baking pan, spoon some sauce in the bottom. Just a little bit.
Layer three lasagne noodles over the sauce.
Spread half the cheese mixture over the noodles.
Ladle 1/3 of the sauce over the cheese.
Layer three more noodles.
Spread the other half of the ricotta cheese mixture over the noodles.
Ladle 1/3 of the sauce over the cheese and top with three more noodles.
Spoon the remaining sauce over the last three noodles. Cover with shredded or sliced mozzarella.
Cover with foil and cook for one hour at 375. About halfway through cooking, remove the foil.
