Ingredients

chopped onion

uncooked rice - or a combination of cooked and uncooked
I used 1 cup uncooked, 2 cups cooked

vegetable broth
1 to 1 1/2

uncooked shrimp
mine was still partially frozen
Seasoning - salt
pepper, cayenne pepper, and I used a Creole seasoning that I keep on hand
Instructions
Saute onion, pepper, and ham in olive oil for about ten minutes.
Add garlic, tomatoes, and rice. Stir. Cook for about 4 to 5 minutes.
Add vegetable broth. Bring to a boil. Return to a simmer and cook for about 20 minutes.
Add shrimp. Cook 5 to 10 minutes until the shrimp is cooked.
Let sit for a few minutes before serving. Enjoy!
