The trick to quick oven roasted potatoes is to start them in the microwave!
Preheat oven to 450 degrees
Cut potatoes into bite sized pieces and then microwave for four minutes - this will speed up the roasting process
Toss the potatoes in olive oil, salt, and cumin and cooked them at 450 degrees on a high rack for about 25 minutes. Turn once halfway through. That's it.
