These easy ice cream sandwiches are really perfect for any time of year.
I brought a dessert to a fun family potluck tonight and, since it is still technically summer, I made ice cream sandwiches. SO DELICIOUS. And really, really easy…
These are totally not homemade.
I bought all three ingredients … gluten-free chocolate chip cookies from Tate’s (2 bags makes 14 sandwiches), 1/2 gallon vanilla ice cream, and 1 6 oz container of colored sprinkles.
Let the ice cream get a little soft and scoop one generous scoop for each pair of cookies. Put the two cookies together and use a butter knife or a spatula to even out the ice cream as you kind of rotate the sandwich. It’s so warm here, so I put each ice cream sandwich in the freezer as I made it.
Once all the sandwiches are made, pour your colored sprinkles on a small plate and roll the edge of your sandwich in the sprinkles. Freeze the sandwiches again until you are ready to enjoy them!
