Salmon, Artichokes, and Bowties
1 lb. bowtie pasta
2 t. olive oil
2 lb. grilled salmon steaks, cut in 1 in. pieces
1/2 c. diced ham
1 c. chicken or vegetable broth
1 can artichoke hearts, chopped into 1 in. pieces
2 T. parsley, chopped
Directions: Cook pasta according to directions. Heat oil in a dutch oven. Saute ham until crispy. Stir in broth, salmon, and artichokes. Bring to a simmer. Add parsley. Stir mixture into bowties. Season with salt and pepper. Sprinkle with a little fresh parsley.
