Every once in awhile, I send out the bat signal and gather my friends and their kids for a potluck dinner at my house. I convince my kids to pitch in and get the house ready by telling them how lucky they are that I am inviting their friends over to play. Truthfully, this is a purely selfish endeavor. I just want to hang out with some sane adults and not have to pay a babysitter. 😉
For our last potluck, my friend let it slip that she was making vodka sauce that day… Vodka sauce, you say??? Dinner theme decided! Italian. Bring the vodka sauce, and we’ll fill in the rest.
For my contribution, I knew I wanted to use up the last of the bell peppers from my garden. I also knew that I didn’t have time to cook anything too fancy. Maybe I should say that I didn’t really have time to cook. Period.
This recipe is one step under ordering take out. Except way better for you.
I sauteed my peppers and onions. Added cooked Italian sausage links, sliced into even, round disks. Poured in jarred sauce. YUP. Jarred sauce. Stir. Heat. Done. There were basically no leftovers.
There’s no shame in the semi-homemade game.
Sometimes you’ve just got to embrace the simplicity! Especially around the holidays. Or, really, any day!

Sausage and Peppers in Sauce
Ingredients
- 1-2 T . olive oil
- 2 bell peppers , sliced
- 1 onion , sliced
- 3-4 cloves garlic , chopped
- 1 lb . Italian sausage links , cooked and sliced
- 1 large jar spaghetti sauce
Instructions

Combine peppers, onions, and garlic in a large pan with olive oil. Salt slightly. Saute.

Add sliced Italian sausage.

Pour sauce over everything. Stir. Heat through.

Serve over your favorite cooked pasta.
