Necessity is the mother of invention! With about 5 minutes to go before my friends arrived for the big game on Sunday, I had lots and lots of protein – wings and kabobs and chili – but no veggies other than carrot and celery sticks! Oops. Quickly, I scanned the veggie crisper, saw 1/2 a cabbage and a couple of carrots and immediately thought, Creamy Cole Slaw.
Not wanting to chop cabbage and grate carrots (and, really, I didn’t have enough time!), I grabbed my food processor. This creamy cole slaw came together in about five minutes. No lies. I chopped about 1/3 of the cabbage (about 1 pound) into large chunks and tossed it into the food processor. As the cabbage became mostly chopped, I removed it to a large bowl and added in a couple chunks of red onion and the two carrots cut in half.
After chopping (ahem, food processing!) everything, I combined the cabbage, carrots, and red onion in a bowl, added salt, red wine vinegar, and mayo. Yup. That’s it. Done. It was DELICIOUS!! It was the perfect tangy accompaniment to all our party foods. Make this. It might become your new favorite coleslaw!

What?! This is awesome! My husband doesn’t like any cold food (weirdo,) but at least I can enjoy my own servings with this idea! I so need to give this a try!
I know! This really was awesome. I hope you try it!
I LOVE cole slaw, but it always takes forever to chop, this is a terrific time saver
Me, too! I don’t know why I didn’t think of this sooner.
Great save! I love the vinegar in this. Creamy is good, but often, it turns out TOO creamy. This looks perfect!
Thanks, Patricia! I was kind of patting myself on the back for this one. 😉
What a great, quick side dish. I love how quickly this comes together!
Thanks, Sarah! It does come together SO quickly!
I love having quick recipe hacks like this up my sleeve! Can’t go wrong with coleslaw– ever!
I recently had coleslaw made this way with red cabbage at a brewery in NYC. It was excellent.
Can’t wait to make it at home.
Just made this, fab idea, I love coleslaw and always buy it, and what I buy looks exactly like this . Really happy.
Thanks, Karin!! It really is almost easier to make it, isn’t it? And you know it’s so fresh!
I have a version with not quite as much mayo and some raisins. So easy and I love it
Raisins!! Love that idea! My kids would probably love that, too!
