And all it takes is a few ingredients and not much time …
Roasting is my favorite way to eat vegetables with dinner. We LOVE all roasted vegetables … a few of our favorites are – Lemon and Garlic Roasted Brussels Sprouts {Video}, Roasted Asparagus Wrapped in Prosciutto, Crispy Roasted Okra, and Roasted and Smashed and Potatoes.

Cumin Roasted Carrots
Super simple, kid friendly carrots.
Ingredients
- 1 bunch carrots
- 1 T olive oil
- 1 t cumin
- 1 t salt
Instructions

I don’t peel my carrots - I just scrub them. I cut off the pretty, leafy greens but left a little bit of green at the top. I cut the carrots in half so they would cook evenly and be easier for my kids to eat.
Preheat the oven to 425. Line a cookie sheet with foil.
Lay out the carrots on the foil. Pour a little olive oil over the carrots. Sprinkle with cumin and salt. Using your hands coat the carrots evenly with oil.Bake for 20 to 25 minutes. Enjoy!
