Back to school! Busy nights call for more slow cooker meals. Corned beef and cabbage is such a family favorite, why not make it a slow cooker corned beef and cabbage and eliminate lots of work for you? Chop some veggies, add the corned beef, turn it on. Done!
My kids love corned beef and cabbage because the veggies are as much a star of this dinner as is the corned beef. With carrots, potatoes, onions, and cabbage, there’s got to be a veggie in there for everyone. Don’t like cooked carrots? Eat more potatoes! Don’t like onions? Hmm… that’s not an onion, that’s cabbage! 😉
Chop your veggies and dump them in the bottom of your slow cooker. Potatoes, carrots, and onions go first! Cabbage will cook up quickly so don’t add that until it’s almost time for dinner. Nestle your corned beef among the veggies, dump 3 cups of water or broth over the top, add the corned beef herbs (usually found right in your corned beef packaging!) and cover and cook.
To satisfy my timing needs, I cooked it on high for 6 hours. At about 5 hours I added in the cabbage. There’s not much else to do. Why only eat corned beef and cabbage on St. Patrick’s Day? I guarantee you that you can find corned beef at your grocery store all year long.
I saved this slow cooker meal for a Friday. We were all exhausted and craving something really hearty. My son left for school in the morning confirming with me that I was sticking to my Friday corned beef plan. Have no fear, the house will smell amazing when you get off the bus.
If you want to make something to accompany this dish, a soda bread is always a nice, easy side. Or make nothing! Serve with spicy brown mustard. Enjoy!
Slow Cooker Corned Beef and Cabbage
Ingredients
- 1 corned beef with seasonings
- 6 to 8 white or red potatoes , chopped
- 1 large onion , chopped
- 1 lb . carrots , chopped
- 1 small head of cabbage , chopped
- 3 to 4 cups of broth or water
Instructions

Chop veggies, except cabbage, and lay them in the bottom of the slow cooker.

Add corned beef on top of the veggies. Add seasoning.

Pour water or broth over the top.

Cook on high for 5 hours.

Add cabbage. Cook on high for about another hour.
