Apples, Goat Cheese, and Toasted Walnuts Salad

We have a salad almost every night with dinner – usually made with arugula. We love arugula and it is such a great local, fall green! For this easy salad, I topped our arugula with spoonfuls of goat cheese, thinly sliced Pink Lady Apples and toasted walnuts.

Apples, Goat Cheese, and Toasted Walnuts Salad

To make the toasted walnuts …

Walnuts, butter, maple syrup, cayenne pepper, rosemary

Ingredients:

1 cup chopped walnuts
2 tablespoons of maple syrup
1 tablespoon of butter
1 sprig of rosemary – stripped
pinch of cayenne pepper

Directions …

Combine all the ingredients in a small frying pan. Stir the walnuts to coat. Cook over low for about 10 minutes – stirring as needed. Don’t let the walnuts burn! Serve right on top of your salad and if you have any extra, put them in a small container and save them for later.

Almost ready …
Finished … Toasted walnuts – delicious!

The Local North Carolina Lineup …

Arugula from Jones Family Farm
Goat cheese from the Looking Glass Creamery
Apples from Ben Lynch Orchards
Rosemary from my backyard
