Caramelized Onion and Goat Cheese Burgers

One of my favorite things about summer is grilling. The bonus to grilling dinner is that it keeps the heat and the mess out of the kitchen! This past weekend, we decided to grill some burgers using our grass-fed hamburger from C-Saw Hill Farm.  I caramelized the last of my red onions that I had picked up at the Davidson Farmers Market a couple of weeks ago and added in a few teaspoons of goat cheese from the Looking Glass Creamery and some seasonings. Delicious!

Grass fed beef has a tendency to be a little bit leaner than the meat found at your local supermarket so adding a little goat cheese gave the burger a little extra moisture to compensate for the lower fat content. It takes a little bit of effort to caramelize onions – heat some oil and let them cook until you think that they are about to burn. There is no rushing the caramelization process – be patient.

Directions: For one pound of hamburger, you will need one small onion and about 3 tablespoons of goat cheese. Caramelize the onion, sliced into thin rings. Remove from heat. Add the caramelized onion and goat cheese to the hamburger. Season with rosemary, salt, and pepper. Make into 4 to 5 small patties.

Grill!! Remember not to press your spatula on the patties while they are cooking – it squeezes all the tasty juices out! My husband likes to see the flames shoot up from the fire when he presses on the burger. Resist this urge. There is no need! Try to cook your burgers and flip them only once if possible. Enjoy!

Serving suggestions… Instead of serving the burgers on a bun, we served our burgers wrapped in big pieces of Bibb lettuce with a delicious red onion and caper potato salad.

  1. Wow! These burgers look amazing. I absolutely love grass fed beef and goat cheese is amazing. I have trouble finding grass fed beef locally so I always order online from La Cense Beef. If you are ever in need of a place to buy it you should check out their site. The flavor of their montana beef is simply delicious. I’m hooked and I don’t think I would ever go anywhere else to buy it.
