Chili Rice

Do you like chili? Do you like rice? Put them together in a one-pot meal and everyone in your family will devour it!

Chili Rice

3 T. olive oil
1 red onion, finely chopped
1 red pepper, finely chopped
1 yellow pepper, finely chopped
1 lb. ground chicken, turkey, or beef
1 jalapeno, finely chopped
1 large tomato, diced
2 cloves garlic, diced
2 T. chili powder
1 T. paprika
1 T. cumin
2 t. salt
1 t. black pepper
2 c. chicken broth
1 1/2 c. water
2 c. uncooked white rice (I use jasmine)
1 can kidney beans, rinsed and drained
3 scallions, diced

Heat oil in a dutch oven or large heavy bottomed pan. Add onion and peppers and saute until the onion is translucent – about 8 to 10 minutes. Add ground meat, jalapeno, garlic, and tomato. Cook until meat is done, about 10 minutes. Drain any excess fat. Add seasonings, chicken broth, water, rice, and beans. Heat to boiling, reduce heat to low, cover and cook about 20 minutes. Add diced scallions before serving.

I served this topped with a guacamole dip. Delicious!
