If you are looking for something a little different for dinner, but still easy, this simple twist on fried rice might do the trick. I serve a lot of stir fry and fried rice meals because they are easy and forgiving. Got lots of random veggies in your crisper? Make a stir fry or throw together fried rice.
Kimchi Fried Rice
Kimchi fried rice might sound exotic but it’s really not.
Kimchi is fermented cabbage with A LOT of flavor. I found my kimchi at my local Earth Fare grocery store. The kale is from my garden. I cooked the rice in my slow cooker in the morning so I could throw this together quickly. I had one lonely slice of deli ham so I chopped that up, too. Waste not, want not.
Kimchi Fried Rice
This super easy kimchi fried rice will be a new family favorite!
Ingredients
- 1 onion chopped
- 5 cloves garlic chopped
- 1 slice ham chopped
- 1 T butter
- 2 T olive oil
- 1 c kimchi
- 2 c rice cooked
- 2 c kale cut into ribbons
- 2 eggs
- 2 t tamari
Instructions

Saute 1 small onion, 5 cloves garlic, and 1 slice of ham in butter and olive oil.

Add 1 cup of kimchi plus 2 tablespoons of the kimchi liquid.

Add 2 cups of previously cooked rice.

Stir well. Continue cooking.

Add 2 teaspoons gluten-free tamari or soy sauce. Stir. Cook.

Add a handful or 2 of kale. Cook until wilted but still bright green.

Stir! Serve in individual bowls. Top with a fried egg.
