These lemon and garlic roasted brussels sprouts are one of our absolute favorite side dishes. They are so delicious!! And so easy. As fall and winter approaches, I get so excited about all of the new veggies we can have with dinner. Or, sometimes, just as an afternoon snack. Brussels sprouts are such a treat and they aren’t that hard to prepare. They even work really well on your holiday dinner table.

We went a little bit of a different route than Ina and kept ours more on the green side, but whatever way you choose, roasting veggies is so easy. My 4th grader took some video clips to prove it …
Brussels Sprouts in Live Action

All you need is a brussels sprouts, garlic, 1/2 a lemon, olive oil, and salt. Roast for about 30 minutes at 400 degrees. Enjoy!
If we have extra carrots or onions or broccoli or just about anything else hanging around in our veggie crisper, we add them to the pan! Everything tastes amazing roasted.

Easy peasy! Make these lemon and garlic roasted brussels sprouts for an easy side dish.
Ingredients
- 1 lb brussels sprouts chopped in half
- 2 T olive oil
- 1/2 lemon squeezed
- 4 cloves garlic chopped
Instructions

Prepare brussels sprouts. Add olive oil, freshly squeezed lemon juice, and garlic. Toss to combine. Roast for 30 to 40 minutes at 400 degrees.
