Boxed Cake Mix For The Win

As usual, I relied on a handy boxed cake mix – gluten-free – from Betty Crocker. Easy. For the frosting, I made buttercream and divided the batch in half. I kept half the batch white and the other half I dyed football field green grass green. I love Wilton gel colors for dying fun colored icing.

There are two parts to this design – the field and the fans.

Two Parts For This Project: The Field and The Fans

For the fans, I simply had the kids frost the tops of the mini cupcakes with white frosting and then dip the tops in rainbow-colored sprinkles. So easy. They loved it.

For the field, I filled a decorator bag with turf green frosting after getting my batch of frosting to just the right color and attached metal tip #233 – this tip is actually called the grass tip. It’s great for making grass or fur. Wilton also has so many great ideas for fun decorating projects. Click here to see their blog!

We arranged our field first with the FANS around the edges and then decorated the FIELD right on the tray. No moving anything around after they were decorated.

For the end goals, my girls cut up some yellow straws and took out their favorite crafting tool – the hot glue gun – and made some pretty cool looking uprights. If you wanted edible end goals, you could probably do something similar with pretzels.

So … get ready for the big game! Make these awesome football field mini cupcakes and wow your kids – or your friends!

Ingredients

  • 1 box gluten free cake mix

Easy Buttercream Frosting

  • 1/2 c shortening
  • 1/2 c butter softened
  • 1 t vanilla extract
  • 4 c powdered sugar approximately
  • 2 T milk
  • 1/2 t kelly green food dye approximately
  • 1/2 c rainbow sprinkles

Instructions

  1. Make mini cupcakes as directed on the box. Let cool.

  2. Prepare buttercream frosting - whip the shortening and butter together. Add vanilla. Add powdered sugar. Add milk until it's the right consistency. You want MEDIUM consistency frosting so that your grass stands up when you pipe it.

  3. Add Kelly Green colored food dye to 1/2 the batch of frosting until it is a bright, fun green.

  4. Frost enough cupcakes (about 26) to line the edges of your field with white frosting and then dip in rainbow sprinkles.

  5. Fill decorator bag 1/2 full with kelly green frosting. Add decorator tip 233. Frost each mini cupcake with grass! You will need about 28 mini cupcakes decorated green.

  6. Make your field! Add some end goals. Enjoy your party!
