This delicious rotisserie chicken salad is the result of leftovers.
I love any meal that I can stretch to a couple nights, don’t you? This past weekend, two of my kids had winter swim team championships that didn’t wrap up until well after 6pm. I popped into the grocery store and grabbed broccoli, mushrooms, and pre-cooked rotisserie chickens.
The mushrooms were a special request from one of the swimmers – how could I say no? Having precooked chickens saved me so much time! All I needed to do was cook up my broccoli with some garlic and saute the special-request mushrooms. Dinner was ready in about 15 minutes after we walked through the door. Easy peasy.
The best part of dinner was knowing that I bought more than enough chicken to feed my hungry swimmers. Visions of rotisserie chicken salad danced in my head. This rotisserie chicken salad takes just a few minutes of prep work to get the chicken pulled off the bones and then a few more minutes to chop the scallions, celery, and parsley. Mix everything together, add salt and mayo. Done. Dinner can’t get much easier.
Some of us ate our rotisserie chicken salad on beautiful pieces of bibb lettuce. Others just wanted it in a big pile on the plate. Even Baby K devoured this! Next time you see rotisserie chickens on sale, grab 2!
SImply Delicious Rotisserie Chicken Salad
Ingredients
- 4 cups (approx.) rotisserie chicken
- 1/2 cup (approx.) mayonnaise
- 1 small bunch scallions , chopped
- 2 to 3 celery stalks , chopped
- 1 handful parsley , chopped
- Salt , to taste
Instructions

Pull apart rotisserie chicken. Roughly chop.

Add scallions, celery, and parsley.

Add mayonnaise. Stir to combine.

Add salt to taste.

Utilizing leftovers is a favourite of mine! Great way to use up those chicken pieces! And remember, you can make homemade chicken stock with the leftover carcass 🙂
