This sweet potato lentil stew is a great vegetarian dish that can easily be tweaked to please meat lovers as well – just add a delicious all-natural chicken sausage and you have a heartier main course.
Sweet Potato Lentil Stew
1 T. olive oil
4 c. vegetable (or chicken) broth
3 c. sweet potatoes, peeled and cubed
1 1/2 c. dried lentils, rinsed
3 medium carrots, chopped
1 medium onion, chopped
4 garlic gloves, minced
1/2 t. ground cumin
1/4 t. cayenne pepper
1/4 c. fresh cilantro or parsley, minced
salt and pepper to taste
Combine first ten ingredients in slow cooker. Cook on low 5-6 hours or until vegetables are tender. Stir in cilantro and seasonings just before serving. So easy!
