PB & J Peanut Butter Cookie Sandwiches

For the most part, I have not been cooking anything since I became pregnant at the beginning of the spring. But baby Noelle is two weeks old and I have been in the kitchen almost every day since she was born! I am mainly craving desserts and cookies … I don’t even like peanut butter cookies, but I cannot get enough of these yummy little cookie sandwiches!

PB & J Peanut Butter Cookie Sandwiches

1 stick butter, softened
1/2 c. peanut butter
1/2 c. sugar
1/4 c. brown sugar
1/2 t. vanilla
1 egg
3/4 c. flour
1/2 t. baking soda
1/4 t. baking powder
1 c. quick oats

Blend softened butter in mixer until fluffy. Add peanut butter and continue mixing. Add sugars and vanilla. Blend. Add egg. Mix dry ingredients together. Add them all at once to the wet mixture. Beat on low to medium speed to mix ingredients together. Drop rounded balls on cookie sheet lined with wax paper. Bake at 350 for 10 minutes. Cool on wire rack.

To assemble cookies: spread peanut butter on the bottom of one cookie and jam or jelly on the bottom of a second cookie. Press together. Refrigerate sandwiches until you are ready to eat. Enjoy!!
