The Perfect Egg Sandwich

If you’ve got kids who want to start cooking in the kitchen, this perfect egg sandwich is an excellent starter meal! My 9 year old daughter has been obsessed with baking for the past couple of years but only recently did she decide to try her hand at cooking. Of course, as a mom, this has stressed me out a little bit. Hot things, small girl – you know, it makes a mama nervous.

She smartly decided that the first thing she wanted to learn to cook all by herself was eggs. She tackled scrambled eggs first, then an omelet, and then, through pure experimentation, she tripped across sunny-side-up eggs. She cracked the egg, poured it into the pan, and watched it slowly cook… the egg whites losing their translucence and getting more opaque by the minute, the bright yellow yolk just sitting there perched on top. She gently used a spatula to loosen the edges of the egg whites and asked me, “Do I have to flip it over?” I told her if she didn’t flip the egg, it would be called sunny-side-up.

She was astounded that it even had a name. I think she was also a little miffed that she had lived nine years without experiencing such a thing. She stared the egg down and declared that this would be her new favorite way to cook eggs. I have to admit that I, too, have jumped on the sunny-side-up egg bandwagon. The melty yolk dripping all over the bread and sausage and avocado or whatever you happen to put on your plate that morning … It really can’t be beat.

Sunny-side-up forever…

Ever since our sunny-side-up egg discovery, when we have no idea what to make for breakfast, lunch, or dinner, we do a variation of a sunny-side-up egg sandwich. O’Dough’s makes an awesome soft, gluten-free bagel – perfect for egg sandwiches. Sometimes we put a nice sage sausage patty underneath the egg or a thick slice of tomato. Bacon and avocado are also delicious egg sandwich add-ons.

An important side note … Sunny-side-up eggs are prettiest if they are local eggs. Don’t hate the player, hate the game. Store-bought eggs are not going to have such a vibrant yolk and the whites tend to run all over the pan. Buy some local eggs and do a sunny-side-up side-by-side comparison. I guarantee you that you will be wowed…

For each perfect egg sandwich …

1 bagel, 1 egg, 1 cooked sausage patty, 2 slices of avocado

To Make a Perfect Sunny Side Egg

Melt 2 teaspoons of butter in a small skillet, heat over medium-low. Add 2 eggs, one at a time. Let the eggs cook for about 90 seconds. Season with salt and pepper.

Layer half the bagel, one sausage patty, one sunny side up cooked egg, 2 slices of avocado, season with salt and pepper and top with the other half of the bagel. ENJOY!!!
