Easy Chicken Cacciatore In A Slow Cooker

This easy chicken cacciatore in a slow cooker is so easy and full of flavor.

I couldn’t believe how easy and delicious this was. Devoured by all!

Chicken Cacciatore

3 chicken breasts, trimmed
3 cans diced tomatoes (14 oz. each)
8 oz. sliced mushrooms (or 1 can sliced mushrooms)
4 oz. can sliced black olives
3 carrots, chopped
3 stalks of celery, chopped
2 medium onions, chopped
2 cloves of garlic, chopped
1 bay leaf (if you have one on hand)

Combine everything in a crock pot. Put the chicken breasts on top of everything – stir the tomatoes around the chicken. Cook on high for 4 hours, low on 8 hours, or alternate for 6 hours. Serve over rice or pasta. So easy!!

  1. Hey Carrie! Boneless chicken breasts… with all the tomatoes, it never dried out. I need to make this next week and post a photo – layer the veggies on the bottom, then the chicken, then pour the tomatoes over the top. Sometimes I even cut the chicken breasts into medallion slices while it is partially frozen and then toss it into the crock so it makes it easier to serve to the kiddos when it is all cooked.
