Roasted Carrots With Cumin

It’s hard to describe how fast these roasted carrots with cumin were devoured by my children.

During these COVID times, every grocery delivery is like an episode of Chopped. I order carrots and beef and see what turns up. 🤣 These carrots were STUNNING, but the beef I ordered showed up as a chuck roast.
The chuck roast ended up being delicious, but wow did it take a long time to cook in the slow cooker – on high!
The highlight of our meal was definitely the cumin roasted carrots. Super easy. Kids loved them. The cumin is subtle and kid-friendly.
How I Prepared The Cumin Roasted Carrots
I don’t peel my carrots – I just scrub them.
I cut off the pretty, leafy greens but left a little bit of green at the top. I cut the carrots in half so they would cook evenly and be easier for my kids to eat.
Preheat the oven to 425. Line a cookie sheet with foil.
Lay out the carrots on the foil. Pour a little olive oil over the carrots. Sprinkle with cumin and salt. Using your hands coat the carrots evenly with oil.
Bake for 20 to 25 minutes. Enjoy!
