White Bean Chicken Chili

When you live in Ohio, you need ALL different kinds of chili recipes to get you through the winter!

White Bean Chili

2 cans cannellini beans (or similar white beans)
4 cups chicken stock
4 tablespoons (1/2 stick) butter
6 cloves minced garlic
3/4 cup diced onion
2 7oz. cans chopped green chiles
1 red or green bell pepper, chopped
1 pound boneless, skinless chicken breasts, finely chopped
1 tablespoon ground cumin
1 tablespoon dried oregano
1 to 2 teaspoons ground black pepper
1 or 2 teaspoons salt
Pinch red pepper flakes
1/2 bunch cilantro leaves, chopped

Saute garlic, onions, chiles, and pepper in butter for 5 minutes. Add beans, chicken, cumin, oregano, salt and pepper, red pepper flakes, and cilantro. Bring to a boil. Stir together well. Lower heat to medium and cook for approximately 1 1/2 hours. Stir occasionally. Serve over rice or with cornbread.
