Baby Asparagus and Crispy Garlic Saute

Three cheers for spring! So excited to see asparagus at the farmers’ markets and on menus around town. It’s currently pouring down rain but if I keep eating this baby asparagus and crispy garlic like it’s my job, I can pretend the sun is shining and I am not shivering and cold.

We love sauteeing green things in olive oil and salt accompanied by obscene amounts of garlic. I have yet to meet a vegetable that did not shine with that trifecta. Olive oil, salt, garlic. Done. My daughter asked if I could make just a plate of the crispy garlic for her… I told her if she peeled the garlic, I would gladly make her a plate of crispy garlic.

Truly, the only thing that holds me back from adding even more garlic to these sauteed veggies is the amount of time it takes me to peel and slice up the garlic. I would add more garlic if I had the patience. This plate of baby asparagus and crispy garlic probably has about 6 large cloves of garlic in there! YUM.

This is another fake recipe … crush and slice garlic. Add it to a pan with hot olive oil. Add salt. Stir to coat. Let it start getting a little bit brown. Add your baby asparagus. Continue to cook until the asparagus is bright green – cooked just enough to be easily eaten but not too soft.

Serve on its own or as a delicious side! This was intended to be a side dish but, as you can see from the photos, Baby K decided he didn’t want to wait for dinner… Who could blame him?

Ingredients

  • 1 lb baby asparagus snap off bottoms
  • 2 T olive oil
  • 6 cloves garlic sliced
  • 1 t salt to taste

Instructions

  1. Add sliced garlic to olive oil. Add some salt. Cook until garlic starts to turn a little brown on the edges. Add asparagus. Continue to cook for a few more minutes until asparagus is bright green but still crispy. 

Enjoy fresh asparagus while you can get it!
